双流国际机场食用冰块卫生状况调查分析

　　摘要：目的 调查了解双流国际机场餐饮企业自制食用冰块的卫生状况，为国境口岸食源性疾病防控工作提供科学依据。方法抽查双流国际机场19家餐饮企业的自制食用冰块37份，按GB 2759.1-2003《冷冻饮品卫生标准》进行检验和评价。结果抽查的37份食用冰块中，合格样本16份，合格率为43.24%。不合格样本为菌落总数和大肠菌群超标。全部样本未检出沙门菌、志贺菌和金黄色葡萄球菌等致病菌。从其中3份样本中分别分离到3株细菌，经鉴定为铜绿假单胞菌、阪崎肠杆菌和肺炎克雷伯菌。结论双流国际机场食用冰块的卫生状况不容乐观，条件致病菌是食源性疾病发生的一大隐患，今后应加强卫生监督管理。

　　Investigation and analysis on edible ice at ShuangliuInternational Airport

　　Abstract:   Objective   To investigate the hygienicquality of edible ice at Shuangliu International Airport, and toprovide the basis for prevention and control of food borne disease. Methods   A total of 37 samples from 19 cateringenterprises at Shuangliu Airport were randomly collected, tested,and evaluated according to GB 2759.1-2003 Hygienic standard forfrozen drinks.  Results   Only 16 (43.24%) samples werequalified. The main reason of unqualified was exceeding thestandard limit of aerobic bacterial count and Coliform bacteria.Salmonella, Shigella, and Staphylococcus aureus were not detectedin all samples. Three bacteria were isolated from 3 samplesrespectively, and identified as Pseudomonas aeruginosa, Cronobactermalonaticus, and Klebsiella pneumoniae using bioMérieux ATB ID 32Etest strip and 16S rRNA gene sequence analysis.  Conclusion  The hygienic situation of edible ice at ShuangliuInternational Airport was not optimistic. The opportunisticpathogens were the potential risk of food borne disease. Sanitarysupervision and management should be strengthened.
