摘要:目的通过对2007—2011年汕头空港口岸卫生监督抽检结果进行分析,探讨如何更有效开展口岸卫生监督工作。方法对2007—2011年汕头空港口岸相关企业经营或供应的食品、饮用水、餐具抽检结果进行描述、统计、分析。结果2007—2011年汕头空港卫生监督共抽检食品292份,合格283份,合格率96.9%;餐具549份,合格520份,合格率94.7%;饮用水67份,合格55份,合格率82.1%;饮用水合格率低于食品及餐具合格率,差异具有统计学意义(P<0.05)。结论汕头空港食品、餐具卫生状况良好,饮用水卫生状况差于食品及餐具,对存在的主要问题提出了解决的对策,包括在航空食品卫生监督中引入HACCP管理体系,确保从业人员掌握正确操作消毒碗柜的方法并严格执行,加强对直饮水及机上供水的卫生监督等。

Analysis on results of random samples in thesanitary supervision at Shantou airport from 2007 to 2011

Abstract: Objective To Explore how to effectively carry out port sanitary supervisionby analyzing results of random samples in the sanitary supervisionat Shantou airport from 2007 to 2011. Methods Theresults of random samples of food, drinking water and tableware inthe sanitary supervision at Shantou airport from 2007 to 2011 weredescribed and analyzed. Results A total of 292food samples were tested and 283 were qualified with a passing rateof 96.9%, 549 tableware samples were tested and 520 were qualifiedwith a passing rate of 94.7%, 67 drinking water samples were testedand 55 were qualified with a passing rate of 82.1%. The passingrate of drinking water was lower than food and tableware with asignificant difference (P<0.05). Conclusion Food and tableware hygiene of Shantou airport is good, and drinkingwater hygiene is poorer than the first two. It is necessary tosolve the main problems such as introducing HACCP into the aviationfood hygiene supervision, ensuring the food employees grasp thecorrect operation of sterilizer and strengthening sanitarysupervision on direct drinking water and aircraft water.
