摘要:目的分析存在孔雀石绿残留风险的出口水产品,确定出口水产品中孔雀石绿残留状况及相对严重程度。方法应用层次分析法食品安全预警理论,建立数学模型对汕头出口水产品中孔雀石绿残留进行风险评价。结果综合考虑检出率和检出构成比,存在孔雀石绿药物残留风险的10种出口水产品中,金鲳鱼、鲈鱼风险程度最大,其权值>0.2;其次为甘鱼、冻生鱼片、包公鱼3种,权值在0.1左右;其余罗非鱼、真鲷鱼、鳗鱼、美国红鱼、黑鲷鱼5种鱼风险程度相对较轻,权值在0.03~0.05之间。结论该数学模型可以综合多个评判指标,对出口风险相对严重的做出比较全面的评价,有利于实施适宜的风险监管措施。

Abstract: Objective To analyze the existing risk of malachite green residue in exportaquatic products, and to determine the residual status of malachitegreen and its relative seriousness. Methods Withthe Analytic Hierarchy Process of early warning on food security, amathematical model was established to evaluate the risk ofmalachite green residue in export aquatic products at Shantouport. Results Taking the detection rate andthe detection constituent ratio into full consideration, among theten types of export aquatic products with the risk of malachitegreen drug residues, there was the greatest risk in golden pompanoand weever, their weight values was greater than 0.2,followed by Kennedy fish, frozen sashimi and baogong-fish, theirweight values was about 0.1. The rest of the tilapia fish, red seabream, eels, red drum and black sea bream were relatively milddegree of risk values in 0.03 to 0.05. Conclusion Thismathematic model can be indicators of more than one judge, and tomake a more comprehensive evaluation of the relative serevity ofexport risks. It is necessary to facilitate the implementation ofappropriate risk surveillance measures.
