重大活动航空配餐食品卫生保障工作分析与探讨

    摘要 〔目的〕探讨重大活动航空配餐食品卫生保障工作模式，确保食品卫生安全，切实履行检验检疫职责。〔方法〕通过对国内外重大活动食品卫生保障工作进行分析与总结，结合上海空港口岸航空配餐食品安全保障工作实际，对存在的主要问题进行分析和讨论，探讨重大活动航空配餐食品卫生保障工作模式。〔结果〕重大活动食品安全保障对我国在国际社会的声誉有很大的影响。卫生监管部门在重大活动保障中的主要职责就是预防食源性疾病的发生，降低食品安全风险，确保饮食安全以及应急事件处置。〔结论〕通过建立重大活动食品安全保障工作组织体系，完善风险分析、预警机制和可追溯体系建立，以及强化检测手段等方式以提高重大活动航空配餐食品卫生保障工作效率，为今后特别是上海世博会期间各种大型国际活动口岸航空食品配餐监管保障工作开展提供有利借鉴。

    [Abstract]   Objective  To discuss the model of food sanitation safeguarding of aviationcatering in important activities, and to fulfill the duties andresponsibilities of government branch. Method    The study summarized the abroad anddomestic food sanitation safeguarding events in importantactivities, and in conjunction with Shanghai Airport foodsanitation safeguarding work practice, to find out the mainproblems and approaches on work mode.  Result    Food sanitation safeguarding in importantactivities has a great impact on the country's internationalreputation. During the important activities the health regulatoryauthorities plays the role of preventing the occurrence offoodborne disease, reducing food safety risks and ensuring foodsecurity and emergency incidents. Conclusion   Throughthe establishment of food safety work organization system, soundrisk analysis, early warning mechanisms and traceability systems,as well as strengthening the means to improve the flight cateringmajor events to protect efficiency.It can provide favorablereference for food sanitation safeguarding works of aviationcatering in various international activities especially forShanghai Expo 2010.
